I already have a chicken in a creamy mushroom sauceon my site but this is quite a bit different so it warrented for a new recipe.
The thigh is a fattier piece that the breast but if you cook it well it's very tasty. You just have to grill it on high heat to get rid of al the flabby bits.
You can pretty much use all the types of mushrooms you want. I used brown mushrooms but just see what you have left or what you can buy.
I love combining this with cauliflower puree but you can eat this with rice, potato or even fries.
Chicken thigh in a creamy mushroom sauce
- bit of oil
- 4 pieces of chickenthigh
- knob butter
- 250 grams mushrooms
- 1 onion, diced
- 2 cloves garlic, chopped
- 1 teaspoon mustard
- 100 ml heavy cream
- pepper and salt
- Season the chicken with pepper and salt. Heat up a bit of oil on high heat. sear the chicken and then bake till cooked.
- Remove the chicken from the pan. Heat up a bit of butter and bake the onion and mushroom until brown. Add the garlic and the mustard. Stir.
- Add the cream, stir, and put the chicken back in. Let this simmer until the sauce has the right consistency.
- Garnish with thyme and serve immediately.
