Green curry soup

I always like curry soups because it's a great wat to add a lot off vegetables to your meal.

In this soup I chose a combination of pak choi and broccli, glassnoodles and beef.

Curry paste

Dit is een van de weinige dingen die ik niet zelf maak. Ik koop altijd de curry pasta’s van Blue Elephant puur omdat hier niets aan toegevoegd is en deze gewoon erg lekker is.

  • 1 steak, cut in strips.
  • 1 packet of green curry paste
  • 1 whole pakchoi
  • 1/2 whole broccoli
  • 400 ml coconut milk
  • 600 ml chicken stock
  • pepper and salt
  • glassnoodles
  • olive oil


  • Heat up a bit of oil in a big pot and bake the curry paste until fragrant. Then add the pak choi and bake together.
  • Add the coconutmilk, the chicken stock and broccoli. Let this simmer for 15 minutes.
  • Prepare the noodles as per on the instructions. Salt and pepper your steak to taste and bake shortly in high heat right before you want to serve the soup.
  • Fill the bowls with the noodles, then the soup als lastly the beef.
