
Chicken tikka massala
Tikka massala is one of my fave curries. It's creamy like a butter chicken but with a bit more kick.

You can hardly call this an Indian dish, I believe this dish originated in England. Because of the colonial past there's a huge diaspora of Indians in England and this dish was made specifically for the English taste.

Ingredients
Voor de marinade
- 4 4 chicken breast, diced
- 100 grams Greek yogurt
- 2 tablespoon lemon juice
- 1 tablespoon garam masala
- 1 teaspoon ginger, pureed of cut finely
- 1 teaspoon salt
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon paprika powder
- 1/4 teaspoon black pepper
- sunflour oil for baking the chicken
For the sauce
- 2 tablespoon sunflour oil
- 1 onion, diced
- 3 cloves garlic, chopped
- 1 teaspoon ginger, pureed or cut finely
- 1 teaspoon salt
- 1 tablespoon paprika powder
- 1 tablespoon garam masala
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/4 teaspoon cayenne
- 1 can tomato cubes a ml
- 350 ml water
- 1 tablespoon sugar
- 40 grams unsalted butter, in cubes
- 150 ml heavy cream
further
- rice, naan and fresh coriander
Instructions
- Marinade the chicken by mixing all of the marinade ingredients (except for the oil of course).
- Heat up the oil in a non-stick pan and bake on high heat until charred. No need to check if the chicken is cooked, it will be cooked in the sauce was well.
- Remove the chicken and clean the pan.
- Heat up some more oil and sweat the onion. Add the garlic and ginger and bake for a minute. The add all the spices and bake for another minute.
- Add the tomato cubed, water and sugar. Add the chicken and let this cook for 20 minutes
- Lastly add the cream and butter. Stir until combined. If the sauce is too thin, cook until reduced. Serve with rice, naan and fresh coriander

Wat een heerlijk recept! Ga dit zeker maken volgende week. Maar vroeg me af of ik ipv kip ook vegetarisch kan maken. Zat zelf te denken aan vega kip. Wat zou jij doen?

Vega kip is een goed idee! Je kunt er ook iets van bonen in doen of bloemkool of aardappel of halloumi (of paneer maar dat vind ik zelf niet zo lekker), er zijn zoveel opties!

Vandaag staat dit gerecht bij mij op het menu, gisteren al de kip gemarrineerd, dus dat komt mooi uit!
