Sigara boregi

This recipe is a classic Turkish recipe,. Sigara boregi are phyllo dough cigars filled with feta, chili flakes and herbs. Think of mozzarella sticks but with feta.

Varieties

You could use other stuffing like apple with cinnamon/sugar or nutella. I'm more of a savory type myself so I prefer the cheese stuffing.

Filo dough

You can also make you own filodoughbut if you don't want to you can buy premade. Just make sure you defrost it by putting it between a damp towel. This way the phylo remains soft.

How to make the cigars

It's best to make triangles of the phylo. On the one side of the dough rectangle make a cut right in the middle, on the other side make a cut at 1/4 and 3/4. Then cut from cut to cut and this way you have perfect triangles.

Wet the edges of the phylo, fill with a tablespoon of stuffing, fold the sides inwards and roll up.

Ingredients

  • 10 sheets phylo, cut in triangles
  • 200 grams feta
  • 1 teaspoon chili flakes
  • 1 tablespoon fresh parsley, chopped
  • sunflower oil

Instructions

  • Mush the feta, chili flakes and parsley with a fork.
  • Wet the edges of the phylo, fill with a tablespoon of stuffing, fold the sides inwards and roll up. Use some extra water for the tip of the phylo.
  • Repeat with the other sheets.
  • heat up a bit of oil and bake the cigars until golden brown and crispy.
  • Let the excess oil drain off on some kitchen paper. Serve with a dip made of yogurt, garlic powder and parsley.
