Quesadilla with spicy chicken

I've said it before but lately I'm hooked on spicy chicken. I have previously made fried chicken and also buffalo chicken.

Spicy chicken

We again use sriracha, I usually buy the regular one and any brand is fine. We mix the sriracha with cream cheese so it's not only spicy but also creamy.


I always use flour tortilla's, I prefer them more than corn tortilla. The recipe for the tortilla is in my cookbook Vers Deegbut that's only in Dutch unfortunately.


For these type of dishes I buy pre grated lowmoisture mozzarella. If you buy buffalo mozzarella and grate it, it's way too wet. You'll end up with soggy quesadillas.

  • 1 chicken filet
  • 4 large tortillas
  • 2 tablespoon sriracha
  • 4 tablespoon creamcheese
  • 40 grams grated cheddar
  • 40 grams grated mozzarella
  • 2 handfulls arugola
  • creme fraiche


  • Boil the chicken in plenty of water until cooked, about 20 minutes, or until cooked. Pull apart with 2 forks.
  • Mix the chicken with the sriracha, cream cheese and the grated cheeses.
  • Divide half of the mixture onto 1 tortille, place in a dry pan and divide some arugula on top. Place another tortilla on top and bake on both sides until golden brown and the cheese has melted. Repeat with the other quesadilla.
  • Slice in 4 pieces and serve with creme fraiche.
