This is so easy to make and it goes very well on a taco with crispy fried chicken. Or how about in a salad? Lovely!

Pickled red onion

  • glass jar


  • 2 red onions, sliced thinly in half rings
  • 250 ml boiling water
  • 120 ml white wine vinegar
  • 1 teaspoon salt
  • 1 tablespoon sugar


  • Mix the boiling water with the sugar and salt. Stir until the sugar has evaporated, then add the vinegar.
  • Put the onion in a glass jar and pour over the vinegar mixture.
  • Let it cool off completely before eating, store in the fridge.
