Butter chicken with rice and naan

If you're a fan of curry but don't like spicy then this is your recipe. Do you like a bit more spice but still not much? I can recommend you this tikka masala dish.

Butter chicken

The name gives it away, this curry is enriched with butter. This makes it an extremely flavourfull and rich dish.


I always serve naan with my curry, sometimes rice as well but not always. The recipe for naan is in my cookbook Vers Deegbut that's only in Dutch.

For the chicken

  • 500 grams chicken fillet, cut in cubes
  • 50 grams Greek yogurt
  • 1 teaspoon salt
  • 1 tablespoon garam masala
  • 2 tablespoon sunflour oil

For the sauce

  • 1 tablespoon sunflour oil
  • 4 cloves garlic, chopped
  • 2 cm ginger, finely grated
  • 1 teaspoon turmeric
  • 2 teaspoon cumin powder
  • 2 teaspoon paprika powder
  • 1 tablespoon garam masala
  • 1 tablespoon tomato puree
  • 250 ml water
  • 200 ml tomato frito
  • 150 ml heavy cream
  • 50 grams unsalted butter
  • salt


  • Fresh coriander
  • rice and/or naan


  • Mix the chicken with the Greek yoghurt, salt and garam masala. Let this marinade for at least 30 minutes.
  • Heat up the sunflour oil and sear the chicken (in batches if your pan gets too crowded). Remove the chicken from the pan and set aside.
  • Add oil to the samen pan (let all the brown bits stay in the pan) and sweat the garlic and ginger.
  • Add the turmeric, cumin, paprika and garam masala and stir until fragrant. Add the tomato puree and stir. Add the water en tomato frito, stir and let this simmer for 15 minutes to reduce the sauce.
  • Add the heavy cream and put the chicken back in. Let this simmer for 10 minuten until the sauce is nice and thick and the chicken has cooked completely.
  • Remove from the heat and stir in the butter. Season with salt as needed.
  • Serve with rice and/or naan and fresh coriander.
